What are horse riding lessons like?

My mom and I currently have a horse, and she has been teaching me a little bit on him, but he is so energetic and jumpy, and has very fast gaits, its hard for me to learn on. So I was thinking I would go into lessons at a near by stable. What do you usually work on (beginner) the first day? Second day? Third? Thanks in advance!
